Ingredients
  

  • 1 cup low -fat cottage cheese
  • 5 ounces cooked chicken breast, cubed
  • 1/4 cup low -sodium marinara sauce
  • 2 tablespoons shredded part-skim mozzarella cheese
  • 1 tablespoon grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes

Method
 

  1. Place the cottage cheese into a microwave-safe bowl and spread into an even layer.
  2. Distribute the pre-cooked cubed chicken breast evenly over the top of the cottage cheese.
  3. Spoon the marinara sauce over the chicken layer.
  4. Season the bowl with garlic powder, Italian seasoning, and red pepper flakes.
  5. Sprinkle the shredded mozzarella and grated parmesan cheese over the top.
  6. Microwave on high for 90 seconds to 2 minutes, or until the cheese is fully melted and the cottage cheese is warm.
  7. Let sit for 1 minute before serving to allow the sauce to set.
