High Protein Chicken Ranch Quesadilla

Ingredients
  

  • 6 oz cooked chicken breast, shredded
  • 1 large high -fiber low-carb flour tortilla
  • 1/4 cup shredded low-fat mozzarella cheese
  • 1/4 cup shredded low-fat cheddar cheese
  • 1 tablespoon dry ranch seasoning powder
  • 1 tablespoon non -fat Greek yogurt
  • 1 teaspoon hot sauce (optional)
  • Non -stick cooking spray

Method
 

  1. In a mixing bowl, combine the shredded chicken breast, Greek yogurt, ranch seasoning, and optional hot sauce until the chicken is evenly coated.
  2. Lay the tortilla flat and spread the chicken mixture across one half of the surface.
  3. Top the chicken mixture with the shredded mozzarella and cheddar cheese.
  4. Fold the empty half of the tortilla over the filling to create a half-moon shape.
  5. Preheat a non-stick skillet over medium heat and lightly coat with cooking spray.
  6. Place the quesadilla in the skillet and cook for 3 to 4 minutes on the first side until the tortilla is crisp and golden brown.
  7. Carefully flip the quesadilla and cook for an additional 3 minutes or until the cheese is fully melted and the interior is heated through.
  8. Remove from the heat and allow the quesadilla to rest for 1 minute before slicing into three wedges.
