Ingredients
  

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 cup non -fat plain Greek yogurt
  • 1 cup feta cheese, crumbled
  • 2 tablespoons hone y
  • 1/4 cup toasted crushed walnuts
  • 1 teaspoon fresh thyme leaves

Method
 

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
  3. Arrange rounds in a single layer on the prepared baking sheet and roast for 20-25 minutes, flipping once at the 12-minute mark, until tender and lightly browned.
  4. While potatoes roast, combine the Greek yogurt and crumbled feta in a food processor or blender; process until the mixture is smooth and whipped.
  5. Remove sweet potatoes from the oven and allow to cool for 5 minutes to prevent the topping from melting immediately.
  6. Top each round with approximately 1 tablespoon of the whipped feta mixture.
  7. Drizzle the assembled rounds with honey and garnish with crushed walnuts and fresh thyme before serving.
