Ingredients
  

  • 16 ounces low -fat cottage cheese
  • 2 cups cooked shredded chicken breast
  • 2 tablespoons taco seasoning
  • 1/2 cup shredded sharp cheddar cheese
  • 4 ounces canned diced green chilies, drained
  • 1 tablespoon fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, sliced

Method
 

  1. Place the cottage cheese in a high-speed blender or food processor and pulse until completely smooth with no remaining curds.
  2. Transfer the blended cottage cheese to a medium mixing bowl.
  3. Fold in the shredded chicken, taco seasoning, diced green chilies, and lime juice until well combined.
  4. Spread the mixture into a microwave-safe serving dish or a small oven-proof skillet.
  5. Top the mixture evenly with the shredded cheddar cheese.
  6. Heat in the microwave for 2 minutes or in a preheated oven at 350°F (175°C) for 10 minutes until the cheese is melted and the dip is warmed through.
  7. Garnish with chopped cilantro and sliced green onions before serving with vegetable crudités or high-protein chips.
