Honey Lime Chicken Avocado Rice

Ingredients
  

  • 1.5 lbs boneless skinless chicken breast, cubed
  • 1/4 cup hone y
  • 1/4 cup fresh lime juice
  • 1 tablespoon soy sauce
  • 3 cloves garlic , minced
  • 2 tablespoons olive oil
  • 3 cups cooked long-grain white rice
  • 1/4 cup fresh cilantro, chopped
  • 2 large avocados , diced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a medium bowl, whisk together honey, lime juice, soy sauce, and minced garlic to create the glaze.
  2. Season chicken pieces with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add chicken to the skillet and cook for 8 to 10 minutes, stirring occasionally, until the internal temperature reaches 165 degrees Fahrenheit.
  5. Pour the honey lime glaze over the chicken and simmer for 3 minutes until the liquid reduces to a thick coating.
  6. In a separate container, fold the chopped cilantro and 1 tablespoon of extra lime juice into the warm cooked rice.
  7. Apportion the cilantro rice into four bowls, top with equal portions of glazed chicken, and garnish with diced avocado.
