Lemon Garlic Butter Chicken Thighs

Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs
  • 1 tsp kosher salt
  • 0.5 tsp cracked black pepper
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 6 cloves garlic , minced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh lemon juice

Method
 

  1. Season chicken thighs evenly on both sides with salt, pepper, and paprika.
  2. Heat olive oil in a large heavy-bottomed skillet over medium-high heat until shimmering.
  3. Place chicken in the skillet and sear for 6-7 minutes per side until golden brown and the internal temperature reaches 165°F (74°C).
  4. Reduce heat to medium-low and add the butter and minced garlic to the skillet.
  5. Tilt the pan slightly and use a large spoon to continuously baste the chicken with the foaming garlic butter for 2 minutes to create a juicy finish.
  6. Remove the skillet from the heat, stir in lemon juice and parsley, and serve immediately.
