Lemon Herb Vinaigrette

Ingredients
  

  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 clove garlic , minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon cracked black pepper

Method
 

  1. Mince the garlic clove into a fine paste.
  2. In a medium glass jar or bowl, combine the lemon juice. Add Dijon mustard, minced garlic, oregano, salt, and pepper.
  3. Whisk the base ingredients until the salt is fully dissolved.
  4. Slowly stream in the extra virgin olive oil while whisking constantly. This creates a stable emulsion.
  5. Alternatively, place all ingredients in a sealed jar and shake vigorously for 30-60 seconds.
  6. Adjust seasoning to taste and serve immediately or refrigerate.
