Lima Bean Hummus

Ingredients
  

  • 15 oz canned lima beans, drained and rinsed
  • 1/4 cup tahin i
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic , minced
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon sea salt
  • 1 tablespoon cold water

Method
 

  1. Place the drained lima beans and minced garlic in a food processor.
  2. Add tahini, lemon juice, cumin, and sea salt.
  3. Pulse until the beans are roughly chopped.
  4. With the motor running, slowly drizzle in the extra virgin olive oil.
  5. Continue processing until the mixture is smooth and creamy.
  6. Add cold water one teaspoon at a time if a thinner consistency is desired.
  7. Taste and adjust seasoning with additional salt or lemon juice if necessary.
  8. Transfer to a bowl and serve immediately.
