Method
- Place the drained lima beans and minced garlic in a food processor.
- Add tahini, lemon juice, cumin, and sea salt.
- Pulse until the beans are roughly chopped.
- With the motor running, slowly drizzle in the extra virgin olive oil.
- Continue processing until the mixture is smooth and creamy.
- Add cold water one teaspoon at a time if a thinner consistency is desired.
- Taste and adjust seasoning with additional salt or lemon juice if necessary.
- Transfer to a bowl and serve immediately.
