Ingredients
  

  • 4 large whole wheat tortillas
  • 2 cups cooked chicken breast, shredded
  • 1/2 cup non -fat plain Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 cup frozen corn, thawed
  • 1/4 cup red bell pepper, finely diced
  • 1/2 cup shredded low-fat cheddar cheese
  • 2 tablespoons fresh cilantro, chopped

Method
 

  1. In a large mixing bowl, combine the shredded chicken, Greek yogurt, lime juice, cumin, and chili powder.
  2. Fold in the black beans, corn, diced bell peppers, cheddar cheese, and cilantro until evenly distributed.
  3. Lay the tortillas flat on a clean work surface.
  4. Spread approximately 1/4 of the mixture evenly across each tortilla, leaving a 1/2-inch border at the edges.
  5. Roll each tortilla tightly into a cylinder.
  6. Use a sharp knife to slice each roll into 1-inch rounds or cut diagonally in half to serve.
