Mediterranean Chickpea Salad

Ingredients
  

  • 2 cans (15oz) chickpeas, rinsed and drained
  • 1 large cucumber , diced
  • 2 cups cherry tomatoes, halved
  • 1/2 red onion , finely diced
  • 1/2 cup Kalamata olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp tahin i
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine chickpeas, cucumber, tomatoes, onion, olives, and parsley.
  2. In a separate small bowl, whisk together tahini, lemon juice, and garlic powder until smooth.
  3. Pour the dressing over the salad and toss well.
  4. Season with salt and pepper before serving.
