Mediterranean Gyro Bowls

Ingredients
  

  • 1 lb ground lamb or lean ground beef
  • 2 cups cooked jasmine or basmati rice
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 cup English cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup prepared tzatziki sauce
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the ground meat to the skillet, breaking it into small crumbles with a wooden spoon.
  3. Stir in the oregano, garlic powder, onion powder, cumin, salt, and pepper.
  4. Sauté the meat until browned and cooked through, approximately 8 to 10 minutes. Drain any excess fat from the pan.
  5. In a separate bowl, toss the cooked rice with lemon juice and half of the chopped parsley.
  6. Divide the lemon-herb rice evenly among four serving bowls.
  7. Layer the seasoned meat over the rice base.
  8. Arrange the cucumber, tomatoes, red onion, and Kalamata olives in sections around the meat.
  9. Top each bowl with crumbled feta cheese and the remaining fresh parsley.
  10. Finish with a dollop of tzatziki sauce before serving.
