Pizza Style Cottage Cheese Bake

Ingredients
  

  • 16 oz low -fat cottage cheese
  • 1 large eg g
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 15 slices mini pepperoni
  • 1/4 teaspoon crushed red pepper flakes

Method
 

  1. Preheat the oven to 400°F (200°C) and line an 8-inch square baking dish with parchment paper.
  2. In a medium bowl, combine cottage cheese, egg, parmesan cheese, Italian seasoning, and garlic powder.
  3. Spread the cottage cheese mixture evenly into the bottom of the prepared baking dish.
  4. Bake the base for 20 minutes until the edges are golden brown and the center is set.
  5. Remove from the oven and spread the marinara sauce evenly over the baked cottage cheese base.
  6. Top with shredded mozzarella cheese and pepperoni slices.
  7. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  8. Allow the bake to rest for 5 minutes before slicing and serving.
