Protein-Packed Freezer-Friendly Breakfast Burritos

Ingredients
  

  • 8 large flour tortillas
  • 12 large egg s
  • 1 lb ground pork breakfast sausage
  • 1 can (15 oz) black beans, drained and rinsed
  • 1.5 cups shredded sharp cheddar cheese
  • 1 medium red bell pepper, diced
  • 1/2 medium yellow onion, diced
  • 1/2 tsp sal t
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Method
 

  1. In a large skillet over medium-high heat, cook the breakfast sausage until browned and fully cooked, breaking it into small crumbles.
  2. Remove sausage and drain excess fat, then sauté the diced bell pepper and onion in the same skillet until softened.
  3. Whisk eggs with salt and pepper in a bowl, then scramble in the skillet until just set; do not overcook as they will be reheated later.
  4. Allow all cooked components (sausage, vegetables, and eggs) to cool completely to room temperature to prevent the tortillas from becoming soggy.
  5. Lay out tortillas and distribute the sausage, egg mixture, black beans, and cheese evenly across each.
  6. Fold in the sides of each tortilla and roll tightly to form a burrito.
  7. Wrap each burrito individually in parchment paper followed by aluminum foil.
  8. Place wrapped burritos in a freezer-safe gallon bag and freeze for up to 3 months.
  9. To reheat, remove foil and parchment, wrap in a damp paper towel, and microwave for 2-3 minutes until the internal temperature reaches 165 degrees Fahrenheit.
