Ingredients
  

  • 2 cups old -fashioned rolled oats
  • 1 cup pumpkin puree
  • 0.5 cup maple syrup
  • 1 large eg g
  • 1 teaspoon vanilla extract
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon pumpkin pie spice
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon sal t
  • 0.5 cup semi -sweet chocolate chips

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius) and grease an 8x8 inch baking pan.
  2. In a large mixing bowl, whisk together the pumpkin puree, maple syrup, egg, and vanilla extract until smooth.
  3. Stir in the rolled oats, cinnamon, pumpkin pie spice, baking powder, and salt until thoroughly combined.
  4. Fold in the chocolate chips.
  5. Transfer the mixture to the prepared baking pan and spread evenly using a spatula.
  6. Bake for 25 to 30 minutes, or until the center is set and the edges are lightly golden brown.
  7. Allow the bars to cool completely in the pan before slicing into 12 rectangles.
