A refreshing Skinny Mojito in a tall glass with fresh mint and lime wedges

Skinny Mojito

Ingredients
  

  • 10 fresh mint leaves
  • 1/2 medium lime , cut into 4 wedges
  • 1 teaspoon granulated stevia or preferred zero-calorie sweetener
  • 2 ounces white rum
  • 1/2 cup club soda
  • 1 cup crushed ice

Method
 

  1. Place mint leaves and 1 lime wedge into a sturdy highball glass.
  2. Muddle the mint and lime gently to release the oils and juice without tearing the leaves.
  3. Add two more lime wedges and the sweetener, and muddle again to extract the citrus juice.
  4. Fill the glass with crushed ice.
  5. Pour the white rum over the ice.
  6. Top the glass with club soda.
  7. Stir gently with a bar spoon to combine the ingredients.
  8. Garnish with the remaining lime wedge and an optional mint sprig.
