Ingredients
  

  • 0.5 lb Ground beef (80/20)
  • 0.5 tsp Kosher salt
  • 0.25 tsp Ground black pepper
  • 2 slices Sharp cheddar cheese
  • 2 cups Romaine lettuce, shredded
  • 0.5 cup Cherry tomatoes, halved
  • 0.25 cup Red onion, thinly sliced
  • 0.25 cup Dill pickles, sliced
  • 2 tbsp Mayonnais e
  • 1 tbsp Yellow mustard
  • 1 tsp Ketchu p
  • 1 tsp Dill pickle juice

Method
 

  1. In a small bowl, whisk together mayonnaise, yellow mustard, ketchup, and pickle juice until smooth to create the special sauce.
  2. Portion the ground beef into four 2-ounce balls without overworking the meat.
  3. Heat a cast-iron skillet or flat-top griddle over high heat until it begins to smoke.
  4. Place the beef balls in the hot skillet, leaving ample space between them.
  5. Immediately press each ball down with a heavy spatula or burger press until approximately 1/4-inch thick.
  6. Season the flattened patties with salt and pepper. Cook for 2 minutes until the edges are dark brown and caramelized.
  7. Flip the patties using a sharp metal spatula. Place cheese slices on two of the patties. Cook for an additional 60 seconds.
  8. Divide the shredded lettuce between two bowls. Layer with cherry tomatoes, red onions, and pickles.
  9. Place two patties into each bowl and drizzle generously with the prepared special sauce.
