Smash Burger Tacos

Ingredients
  

  • 1 lb 80/20 ground beef
  • 8 small flour tortillas
  • 8 slices American cheese
  • 1/2 cup finely diced yellow onion
  • 1/2 cup sliced dill pickles
  • 1/2 cup shredded iceberg lettuce
  • 1/4 cup mayonnais e
  • 1 tablespoon yellow mustard
  • 1 tablespoon ketchu p
  • 2 teaspoons sweet pickle relish
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

Method
 

  1. Divide ground beef into 8 equal portions and form into loose balls.
  2. In a small bowl, whisk together mayonnaise, mustard, ketchup, and relish to create the burger sauce.
  3. Preheat a large cast-iron griddle or skillet over medium-high heat until lightly smoking.
  4. Place a beef ball on the griddle and immediately top with a flour tortilla.
  5. Use a heavy spatula or burger press to smash the meat through the tortilla into a thin layer that covers the diameter of the tortilla.
  6. Cook for 2 to 3 minutes until a dark brown crust forms on the beef.
  7. Carefully flip the taco so the tortilla side is down and the beef is facing up.
  8. Immediately place a slice of American cheese on the beef and cook for 1 minute until the cheese melts and the tortilla is toasted.
  9. Remove from heat and top with diced onions, lettuce, pickles, and the prepared sauce before folding.
