Strawberry Chia Pudding

Ingredients
  

  • 1 cup fresh strawberries, hulled
  • 1 cup unsweetened almond milk
  • 1/4 cup black chia seeds
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract

Method
 

  1. Place the strawberries, almond milk, maple syrup, and vanilla extract in a high-speed blender and process until completely smooth.
  2. Pour the liquid strawberry mixture into a glass jar or medium mixing bowl.
  3. Whisk in the chia seeds until they are evenly distributed throughout the liquid.
  4. Allow the mixture to sit at room temperature for 10 minutes, then whisk vigorously a second time to prevent the seeds from clumping at the bottom.
  5. Cover the container and refrigerate for at least 4 hours, or ideally overnight, until the seeds have fully hydrated and the mixture has thickened.
  6. Stir once more before serving chilled with optional fresh toppings.
