Summer Berry Salad

Ingredients
  

  • 2 cups fresh strawberries, hulled and quartered
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup fresh blackberries
  • 2 tablespoons fresh lime juice
  • 1 tablespoon hone y
  • 1 tablespoon fresh mint, finely chiffonaded

Method
 

  1. Rinse all berries thoroughly under cold water and pat dry with paper towels.
  2. Hull and quarter the strawberries.
  3. In a large mixing bowl, combine strawberries, blueberries, raspberries, and blackberries.
  4. In a small whisking bowl, emulsify the lime juice and honey until fully integrated.
  5. Drizzle the dressing over the berries and toss gently with a rubber spatula to avoid crushing the fruit.
  6. Garnish with fresh mint and serve immediately.
