Sweet Potato Beef Bowl with Hot Honey and Cottage Cheese

Ingredients
  

  • 2 large sweet potatoes, peeled and cubed into 1/2-inch pieces
  • 1 tablespoon olive oil
  • 1 pound 90% lean ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon cracked black pepper
  • 2 cups low -fat cottage cheese
  • 2 tablespoons hone y
  • 1 teaspoon crushed red pepper flakes or hot sauce
  • 1 tablespoon fresh parsley, minced

Method
 

  1. Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Toss cubed sweet potatoes with olive oil, half the salt, and half the pepper on the prepared baking sheet.
  3. Roast sweet potatoes for 20 to 25 minutes until tender and edges are caramelized.
  4. In a large skillet over medium-high heat, cook the ground beef while breaking it into small crumbles until browned and cooked through.
  5. Drain excess fat from the skillet and season the beef with garlic powder, onion powder, remaining salt, and remaining pepper.
  6. In a small microwave-safe bowl, combine honey and red pepper flakes; heat for 15 seconds and stir to create hot honey.
  7. To assemble, divide the roasted sweet potatoes and seasoned ground beef equally among four bowls.
  8. Top each bowl with 1/2 cup of cottage cheese.
  9. Drizzle each portion with the hot honey and garnish with minced parsley before serving.
