Heat olive oil in a large skillet over medium-high heat.
Add diced sweet potatoes to the skillet in a single layer and cook undisturbed for 5 minutes to allow browning.
Stir the potatoes and add the diced onion and red bell pepper.
Reduce heat to medium and cook for 10 to 12 minutes, stirring occasionally, until sweet potatoes are tender and edges are crisp.
Add minced garlic, smoked paprika, salt, and black pepper; sauté for 2 minutes until fragrant.
Remove from heat and garnish with chopped fresh parsley before serving.
