Turkey Sweet Potato Bake

Ingredients
  

  • 1 lb ground turkey
  • 2 large sweet potatoes, peeled and cut into 1/2-inch cubes
  • 1 red bell pepper, diced
  • 1 medium yellow onion, diced
  • 2 cloves garlic , minced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon sal t
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro

Method
 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss cubed sweet potatoes with 1 tablespoon olive oil, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 20 minutes until slightly tender.
  4. While potatoes roast, heat remaining 1 tablespoon oil in a large skillet over medium-high heat.
  5. Add ground turkey and cook until browned, breaking it up with a spoon.
  6. Add onion, bell pepper, and garlic to the skillet and sauté for 5 minutes until vegetables soften.
  7. Stir in chili powder and cumin to the turkey mixture.
  8. Combine the turkey mixture and roasted sweet potatoes in a 9x13 inch baking dish.
  9. Top with shredded cheese and bake for an additional 15 minutes until cheese is melted.
  10. Garnish with fresh cilantro before serving.
