Preheat oven to 400°F (200°C).
In a large bowl, toss cubed sweet potatoes with 1 tablespoon olive oil, salt, and pepper.
Spread sweet potatoes on a baking sheet and roast for 20 minutes until slightly tender.
While potatoes roast, heat remaining 1 tablespoon oil in a large skillet over medium-high heat.
Add ground turkey and cook until browned, breaking it up with a spoon.
Add onion, bell pepper, and garlic to the skillet and sauté for 5 minutes until vegetables soften.
Stir in chili powder and cumin to the turkey mixture.
Combine the turkey mixture and roasted sweet potatoes in a 9x13 inch baking dish.
Top with shredded cheese and bake for an additional 15 minutes until cheese is melted.
Garnish with fresh cilantro before serving.
