Ingredients
  

  • 1 cup low -fat cottage cheese
  • 2 large egg s
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon kosher salt
  • 1/2 cup marinara sauce
  • 3/4 cup shredded mozzarella cheese
  • 1 ounce sliced pepperoni
  • Fresh basil leaves for garnish

Method
 

  1. Preheat your oven to 375°F (190°C) and line a rimmed baking sheet with high-quality parchment paper. Lightly spray the parchment with non-stick cooking spray.
  2. Add the cottage cheese, eggs, garlic powder, Italian seasoning, and salt to a high-speed blender or food processor.
  3. Blend on high until the mixture is completely smooth and liquid with no visible curds.
  4. Pour the mixture onto the prepared baking sheet and spread it into an even rectangle or circle, approximately 1/4-inch thick.
  5. Bake the crust on the center rack for 25 to 30 minutes, or until the edges are golden brown and the center is firm to the touch.
  6. Remove from the oven and allow the crust to rest for 5 minutes to allow the proteins to set for a sturdier base.
  7. Spread a thin layer of marinara sauce over the surface of the baked crust.
  8. Top with shredded mozzarella and pepperoni slices.
  9. Return to the oven for an additional 5 to 7 minutes, or until the cheese is melted and bubbling.
  10. Let cool for 2 to 3 minutes before slicing with a pizza cutter or sharp knife.
