Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
In a large bowl, toss the cubed sweet potatoes with olive oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until evenly coated.
Spread the sweet potatoes in a single layer on the prepared baking sheet and roast for 25-30 minutes, or or until fork-tender and slightly caramelized.
While potatoes roast, place a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until fully browned (about 7-9 minutes).
Drain any excess fat from the skillet. Season the beef with garlic powder, onion powder, smoked paprika, oregano, and the remaining salt.
Divide the roasted sweet potatoes into four serving bowls.
Top each bowl with an equal portion of the seasoned ground beef.
Add 1/2 cup of cold cottage cheese to each bowl.
Garnish with sliced green onions and a drizzle of hot sauce if desired. Serve immediately.
