Ingredients
  

  • 3 cups seedless watermelon cubes, frozen
  • 1 cup frozen strawberries
  • 1/2 cup coconut water
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey or agave nectar (optional)
  • 2 fresh mint sprigs for garnish

Method
 

  1. Place the frozen watermelon cubes and frozen strawberries into a high-power blender.
  2. Add the coconut water, lime juice, and sweetener.
  3. Pulse the blender 3 to 4 times to break up the frozen fruit, then blend on high speed until the consistency is smooth and uniform.
  4. Adjust consistency with more coconut water if necessary.
  5. Pour immediately into chilled glasses and garnish with fresh mint.
