Whipped Cottage Cheese

Ingredients
  

  • 16 ounces full -fat cottage cheese (4% milkfat)
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon fine sea salt
  • 1 tablespoon extra virgin olive oil (optional garnish)

Method
 

  1. Place the cottage cheese, lemon juice, and salt into the bowl of a food processor or high-speed blender.
  2. Process the mixture on high speed for approximately 60 to 90 seconds.
  3. Stop the processor and scrape down the sides of the bowl with a rubber spatula to ensure uniform texture.
  4. Continue processing for an additional 30 seconds until the mixture is completely smooth and no curds remain.
  5. Transfer to a serving bowl and garnish with olive oil if desired.
