Method
- Place the cottage cheese, lemon juice, and salt into the bowl of a food processor or high-speed blender.
- Process the mixture on high speed for approximately 60 to 90 seconds.
- Stop the processor and scrape down the sides of the bowl with a rubber spatula to ensure uniform texture.
- Continue processing for an additional 30 seconds until the mixture is completely smooth and no curds remain.
- Transfer to a serving bowl and garnish with olive oil if desired.
