Zucchini Pizza Bites

Ingredients
  

  • 2 large zucchinis , sliced into 1/2-inch thick rounds
  • 1 tablespoon olive oil
  • 1/2 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup mini pepperoni slices
  • 1 teaspoon dried oregano
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange zucchini rounds on the baking sheet in a single layer.
  3. Lightly brush both sides of each zucchini round with olive oil and season with salt and pepper.
  4. Roast the zucchini slices for 5 minutes.
  5. Remove from oven and top each round with approximately 1 teaspoon of marinara sauce.
  6. Distribute the shredded mozzarella cheese evenly over the marinara.
  7. Place 2 to 3 mini pepperoni slices on each round and sprinkle with dried oregano.
  8. Return to the oven and bake for 10 minutes or until the cheese is melted and bubbling.
  9. Optional: Broil for 1-2 minutes for a golden brown finish on the cheese.
  10. Serve warm.
